Indy Sauce

My new Aunt Indy is a fabulous cook! She made dinner for the whole family and the thing everyone kept raving about was the zucchini in a creamy sauce. When we asked how she made it I found out the secret was the type of cheese. She used a mexican cheese called " Cotija". (Some stores have it with the specialty cheeses and others have it by the cream cheese. )

To make the sauce she just sautéed onions and peppers then added Sour cream and shredded Cotija cheese. She poured it over cooked zucchini but said it is great on anything. And it really is so good on ANYTHING! I like to dip garlic bread in it. I like it with pasta, I like it with vegetables. I like it with meat. ...I think it would even be great on a pizza. Above I have it with asparagus, sausage and pasta and it is soooo yummy!!! 

Thank you Indy! I feel like such a good cook now that I know about Cotija cheese. 

7 LAYER BEAN DIP

1 can refried beans
cumin to taste
garlic powder to taste
3 avocadoes, mashed
2 Tbsp. lemon juice
salt and pepper to taste
½ cup mayonnaise

Layer on a serving dish:
Beans seasoned with cumin and garlic powder to taste.
Avocados mashed with lemon juice, salt and pepper to taste.
Mayonnaise, sour cream, mixed with taco seasoning.
Sprinkle top with cheese, tomatoes, olives, and green onions.

This makes enough for 2 packages of tortilla chips.

VEGETABLE DIP

1 cup sour cream
1 cup mayonnaise
2 tsp. bon appetit
2 tsp. dill weed
½ tsp. onion salt

Combine ingredients, chill and serve.

SOUR CREAM AND ONION DIP

1 envelope Lipton onion soup mix
1 pint sour cream

Chill and serve. Makes 2 cups

Variation: Add ¼ cup chili sauce

RADISH DIP

A family friend used to bring this yummy dip over for to my grandma's. She finally asked for the recipe and found out it is quite simple. I have fond memories of this dip being available to snack on while we helped prepare thanksgiving dinner. We LOVE this dip!

8 oz. cream cheese, softened
1 bunch radishes – finely diced
½ red onion – finely diced
1 tsp. lemon juice / or to taste


Chill and serve with vegetables or crackers.

HOT SPINACH ARTICHOKE DIP

10 oz. frozen chopped spinach
14 oz. can artichoke hearts (NOT MARINATED in oil)
4 oz. can diced green chilies
1 cup mayonnaise
1 cup freshly grated Parmesan cheese (reserve 2 Tbsp. and place on top mixture.)
¼ tsp. garlic powder (I like to add fresh garlic if I have it)


Preheat oven to 325º. Squeeze liquid from spinach. Drain artichoke hearts and cut into eighths. Carefully mix all ingredients. Pour mixture into 9" pie dish. Bake for 15 minutes, stirring twice. Place under broiler for about 1 minute until the top is lightly browned.

CHEESY BEAN DIP

9 oz. can bean dip
3 oz. cream cheese – softened
1 cup sour cream
7 oz. can diced green chilies
1 ½ cup chopped onions
1 ½ tsp. taco seasoning mix
½ lb. Monterey Jack cheese - grated
½ lb. cheddar cheese - grated


In a medium bowl combine bean dip, cream cheese and sour cream; mix well. Add green chilies, onion, and seasoning mix; blend well. Spread half of mixture in a 9x13 inch baking dish. Layer cheese on top, and spread with the remaining bean mixture. Bake at 350º for 20-30 minutes or until bubbly. Serve with tortilla chips, crackers or fresh vegetables.

BLACK EYED PEA SALSA

1 can black eyed peas or black beans, drained
1 can yellow or white corn, drained
2 Roma tomatoes - diced
1 bunch green onions– finely chopped
2 avocados – diced
1 bunch cilantro chopped
1 pkg. Italian dressing – prepared


Mix well, chill to let flavors blend. Serve with Tortilla chips

DIPPING CARMEL

1 cup butter
1 lb. (2 ¼ cup) brown sugar – packed
1 cup corn syrup
1 tsp. vanilla
1 cup sweeten condensed milk
1 dash salt


Melt butter, salt and brown sugar until sugar dissolves. Add remaining ingredients and cook to soft ball (240º on candy thermometer). Serve with fresh fruit of your choice.

YUMMY APPLE DIP

1 (8oz) package of cream cheese
1 cup confectioner’s (powdered) sugar
Mrs. Richardson’s Butterscotch Caramel topping
4-6 granny smith apples cored and sliced (can soak in lemon juice to avoid browning)

Mix together cream cheese and sugar. Drizzle Mrs. Richardson’s Butterscotch Caramel topping over the cheese mixture to make beautiful. Dip apples and enjoy!
