CARROT COOKIES

¾ cup sugar
1 egg
¾ cup shortening
2 tsp. baking powder
1 cup cooked mashed carrots
½ tsp. salt
1 tsp. vanilla
½ cup coconut
2 cups flour


Cream sugar and shortening together, before adding egg and mashed carrots. Sift dry ingredients together and add to above mixture. Add vanilla and coconut. Bake at 375º for 12-15 minutes. Frost cookies while warm.

Frosting:
Zest and juice of 1 orange.
Add powdered sugar until it reaches frosting consistency.
