NUTTY PUMPKIN WAFFLES

2 cups flour
¼ cup sugar
1 Tbsp. corn starch
2 tsp. baking powder
2 tsp. ground cinnamon
½ tsp. salt
¼ tsp. ground ginger
¼ tsp. ground nutmeg
2 large eggs, separated
1 ¾ cups milk
2 Tbsp. butter
¾ cup chopped nuts
½ cup canned pure pumpkin (not pumpkin pie filling)


Combine first 8 ingredients in large bowl. Combine egg yolks, milk and pumpkin in medium bowl; mix well. Add to flour mixture. Stir in butter. Beat egg whites in small bowl until soft peaks form, then gently fold into pumpkin mixture. Stir in nuts. Makes 6 to 8 Waffles.
