2 cups shortening
4 eggs
2 cups white sugar
1 tsp. salt
1 cup brown sugar
2 tsp. baking soda
2 tsp. vanilla
2 Tbsp. water
6 cups flour

Mix together ingredients and divide in two (It is easier to work with in smaller amounts). Roll into 2 inch logs and wrap in wax paper. Refrigerate until firm.

In a blender chop:

2 cups raisins
1 cup water

1 Tbsp. flour
¾ cup sugar
1 tsp. vanilla
1 cup chopped walnuts

Cook filling until thick then add chopped nuts. Slice dough into ¼ inch slices, place about a tsp. of filling between 2 slices of dough and bake for 10 minutes at 350ยบ. There is no need to press dough together before cooking, baking will seal in filling.

“This was my favorite cookie growing up. Only I left out the filing and ate the dough raw and straight from the freezer.” – Kathryn

“I remember these being one of grandpa Epperson’s favorites. Before we would visit him in Driggs, Mom would make dozens of them and then pick the plumpest and beautiful ones and put in a cookie tin as a special gift for him.” – Charlene
