CARMEL APPLES

1 cup granulated sugar
¼ tsp. salt
1 cup corn syrup
¼ cup butter
2/3 cup evaporated milk
1 tsp. vanilla
¾ cup chopped walnuts
6 medium apples (red or golden delicious are preferred)


Place wooden skewers into blossom end of washed, dried apples. Combine sugar, salt, corn syrup, butter, and evaporated milk in a saucepan. Cook over low heat, stirring constantly until syrup forms a firm ball in cold water, or 245º. Add vanilla, stir. Dip apple into caramel mixture. Immediately roll bottom half of coated apple in chopped walnuts. Place on waxed paper to cool.
