1 cup hot mashed potatoes
1 cup sugar
½ cup shortening, melted
½ cup honey
½ tsp. cinnamon
½ tsp. ginger
½ tsp. cloves
1 Tbsp. cocoa
¼ tsp. salt
1 tsp. vanilla
1 egg beaten
1 ½ tsp. soda (dissolved in hot water)
1 cup hot water
1 cup walnuts, coarsely chopped
1 cup fruit mix
1 cup gum drops, cut
1 cup raisins, heated in water and drained
flour (about 1 cup) to make dough like cake batter
Add sugar to mashed potatoes and mix - then add remaining ingredients. Can decorate the top before baking with nuts and maraschino cherries. Makes one loaf. Bake for one hour at 325º.
