SPINACH- PEAR SALAD
One 15oz. can pears in light syrup, drained, reserving ¼ cup of the syrup
2 tsp honey mustard
1 tsp cider vinegar
salt and pepper to taste
1 Tbs olive oil
¾ cup toasted walnut pieces (about 3 oz.)
8 cups baby spinach
¾ cup crumbled gorgonzola or other blue cheese (about 3 oz.)
1. Prepare vinaigrette: Combine reserved pear syrup, honey mustard, vinegar, salt and pepper to taste. Whisk in olive oil. Refrigerate until ready to serve.
2. Just before serving, gently toss together the toasted walnuts, drained pears, vinaigrette, spinach and gorgonzola.
3. Plate salads and serve.
